Leftover nuts after Christmas? Eaten too much meat over the last few days?
One of my favourite recipes from my vegetarian days (it’s all true – despite being a fully paid-up member of the Carnivore Club now I was a Vegetarian for about six years when I was younger ) is a savoury nut loaf with a secret cheese and tomato layer embedded within it for extra yumminess.
The combination of crunchy nuts – brazils, hazelnuts, pistachios, walnuts, anything goes – and the melting layer of cheese and tomato is a winner.
Extra delicious with a spoonful of fresh tomato sauce on the side.
For those days when another slice of meat is a step too far.
