Confessions of a Soup Head

I love soup. I could eat soup every single day of my life and not get bored with it. There, I’ve said it.

Sadly I am in a minority of one in this household.

However, I’ve managed to insert a soup into the New Year festivities and I’m in the process today of preparing this as a starter for our lunch tomorrow.

This is the simplest soup in the world to make and yet it’s luscious, red richness adds something special to a meal at this time of the year. The depth of flavour comes from the grilling of the peppers which adds a smoky sweetness to the soup and a festive, deep redness.I confess to loving the colour of this as much as the taste.

A small bowl of this at the beginning of the meal and my addiction will be satiated for a short while.
