The soufflé fairies
Soufflés are deeply magical objects that are held aloft by the warm breath of fairy creatures.
If you venerate the fairies convincingly enough before you open the oven, that is.
If you don’t offer your libations adequately, well, cheese cow pats are what you get. Because magical creatures can tell when you really believe in them or not.
In this scientific age is it any wonder that household cooks and great chefs worry about how their soufflés will turn out?
Beat, aerate, fold and butter to your hearts content, if you don’t get that fairy breath in there, they will come out like biscuits.
The key is wine. Don’t you find on this blog that this is so often the case.
Have a glass at the ready as you open the oven door. Make sure it’s full. Raise it up and toast your fairy creature asking for its blessings on said soufflé .
I wasn’t reverential enough once at this stage and yup , I got a biscuit.
