Duck pappardelle ragu
I have convinced myself that a) it is cold and wet outside so I need something warming, b) that there really aren’t that many calories in this with a large glass of red wine and c) I have a cold and therefore I need healing: this will definitely do me good.
Big, meaningful, deliciously doughy strands of pappardelle pasta with a richly reduced, shredded duck ragu ladled over it. Glistening and savoury with duck fat and herbs. Finished with a generous handful of freshly grated parmesan.
You may call this comfort food:- I call it medicine.
