Chicken Milanese
I’ve had enough of winter now. Bored with snow and slush and biting winds.
It’s time to herald Spring and to start to lighten meals and look forward to brighter days.
Crunchy with fried breadcrumbs on the outside, chicken breast on the inside oozing mozzarella cheese from a hidden pocket , all topped off with jewel-like sweet peppers, olives, red onions and rocket.
Very mediteranean, very Spring-like, very yummy.
Bring on the sun!

Yes, me too. The sun is overdue. Last year although february was cold we at least got a few warm days and bright skies. This year it’s been floods and snow….
