Spicy chicken satay sticks
The lovely Louisa at Chez Foti posted up a recipe for chicken satay sticks a few weeks ago, and I decided to try them.
They were, as my American friends would say, absolutely awesome.
It’s a lovely recipe with crunchy peanut butter, coconut milk, garlic, freshly squeezed lime juice and a couple of minced chills for a bit of kick.
I had four chicken breasts available which I sliced into strips and marinaded in this mixture for a few hours before threading onto skewers and grilling until slightly charred as instructed.
I have to say that as soon as I’d eaten the first one it was so delicious that I wished I’d made more, and there was in fact lots of satay marinade left so that would have been entirely possible.
So we’re having them again for supper tonight in front of a film – these are perfect finger food and so easy just to nibble on – and I’m making extra for those gluttons amongst us (aka ME).
